Eggplant with Sour Cream
Ingredients:
1 medium or large Eggplant (Brinjal/Baigan)
1 cup sour cream
Cilantro (Coriander/Dhania) leaves
2 Green chillies
1/2 inch ginger
Salt to taste
Olive oil / Vegetable oil
Serving Size: 4 people
How to cook:
Cut the eggplant in thin slices. Shallow fry these slices in pan. Once the eggplant slices are fried, keep them aside. In a blender / grinder add all the other ingredients and grind into a fine paste. Once the paste is ready, pour over the eggplant slices. Serve with Rice or Chapati.

Oats Upma
Oats Upma
Ingredients:
2 cup Oats
5 cup Water
shredded garlic
shredded ginger
cut green beans
cut carrot
finely cut onion
green peas
1 diced tomato
2 green chillies
Olive Oil / Vegetable Oil
Serving Size: Serves 2 people
How to prepare:
Pour Olive oil in a wok (kadhai) and warm it on low flame. Once the oil is warm, put finely cut onion in the wok. Once the onion cooks to slight golden color, put shredded garlic, shredded ginger and green chillies in the wok. After 1 minute, add the cut green beans, cut carrot, green peas and any other vegetables you like. Add a little salt which is for the vegetables. In 5 minutes, these vegetables would be slightly cooked. Add diced tomatos or 2 tablespoon tomato puree at the end. Now, add 5 cups of water to the vegetables. Once the water is boiling, add 2 cup of oats and salt to taste. Let the oats cook for 8 minutes. Mix the oats and vegetables well, so that the combined flavor of all the veggies goes in the oats. Keep cooking, till the excess water is all dry.
The Oats Upma is ready to serve.
